Torta al Limone di Lieke
Ingredients 8-10 pieces, the bottom
100 grams of cold butter
200 grams of flour
100 grams of sugar
1 egg
Padding:
2 lemons: grated zest and juice
3 eggs
150 grams of sugar
60 grams of butter

from 26-28 centimetres

1. Preheat the oven to 200 degrees. Grease a springform (or flan form) of about 26-28 centimetres with butter and dust with flour.
2. First mix all the ingredients for the base together well.
3. Wrap in plastic and leave to rest for an hour in the fridge.
4. In the meantime, make the filling: Beat the eggs with the sugar until everything is incorporated.
5. Melt the butter and grate and then squeeze the lemons: Add everything to the eggs and sugar.
6. Line the mould with the dough that has been lying in the fridge for an hour.
7. Prick holes in the bottom with a fork.
8. Pour the filling onto the dough and spread it out nicely with a spatula.
9. Then place the cake in the middle of the oven and bake for 35-40 minutes. Note: Check in between that the top is not getting too dark. If it does: cover the top with aluminium foil until the cake is ready.
Take the cake out of the oven and let it cool. You can sprinkle the cake with icing sugar.

Lieke is a foodie. She has loved cooking and baking since she was about 10-11 years old. She loves desserts and chocolate. Nothing is more fun than standing in the kitchen with her and seeing her eyes glow when there is a chocolate filling left over or something else she can lick out of the bowl. When we eat together with her parents (Brecht and Jeroen), sister and brother (Rosa and Tijmen) she likes to come and help or she brings something she made at home. Often that is a... dessert. This one is really super tasty and fresh.
