Summery spicy fish dish

Merluzzo estivo alla diavola

Ingredients 4 persons

4 fish fillets (cod or pangasius)

4 tablespoons non-spicy mustard

4 large beef tomatoes cut into thin slices

Olive oil

1 large onion in (half) rings

3-4 large peppers (all colours) cut into thin strips

Cayenne pepper

salt and freshly ground pepper

1. Preheat the oven to 180 degrees.

2. Rub the fish fillets on both sides with a tablespoon of mustard each and sprinkle with salt and pepper. Place them in the oven dish.

3. Heat oil in a frying pan and fry the onion until golden. Then add the pepper and fry until it has softened completely. This takes about 15 minutes, possibly a little longer.

4. Place the thin slices of tomato on the fish so that it is completely covered. Sprinkle cayenne pepper (note: spicy!) to taste and then pepper and salt.

5. If you like it spicy: sprinkle cayenne pepper over the paprika when it is almost ready and then divide the paprika and onion over the tomato.

6. Place the baking dish in the middle of the oven and bake the fish dish until done in 25-30 minutes.


👉🏽 Deze vis is heerlijk met aardappelpuree of eventueel met rijst.

 

Leuk om te weten Als je te laat bent en je zit met bevroren vis, dan kan je die ook besmeren met de mosterd en daarna de rest van het recept uitvoeren. Bij het bakken trekt de mosterd dan wel in de vis. Het is iets minder verfijnd, maar het kan prima.
