Focaccia from the other Mary

Focaccia dell'altra Maria

200 grams of boiled potatoes

350 ml lukewarm water

10 g dry yeast or 25 g fresh yeast

20 g extra virgin olive oil

a pinch of sugar

500 grams of flour

12 grams of salt


A baking tray covered with baking paper

Plastic foil

Towel

1. In a large mixing bowl, put the water, boiled potatoes, yeast, oil and sugar. Mix everything for 1 minute with a mixer on the middle position or on position 4 in the food processor.

2. Then add the flour and the salt. Mix with the dough hook for another 3-5 minutes so that all the ingredients are well mixed together. If the dough is a little too wet: add a few tablespoons more flour. Do not make it too dry!

3. Cover the mixing tray with plastic and then with a towel and leave the mixture to rise for about 45 minutes in a warm, non-draughty place.

4. Spread the dough on the baking tray and press it into an even flat dough mixture with moist fingers. If the dough comes out too high, divide it between two plates or roasting trays that have been greased with oil.

5. Leave to rise a second time (covered with foil and a cloth) for 45 minutes: after about half an hour, preheat the oven to 160 degrees.

6. Pour some oil over the dough and press dimples into it (again, with moist, greasy fingers) and spread some (fresh) rosemary over it if necessary.

7. Put the focaccia in the oven for about 30 minutes. Then turn the temperature up to 180 degrees and give the focaccia another 10-15 minutes until it has turned a nice golden brown.

8. Cut the focaccia into pieces. Delicious with a meal, but also as a snack or at a buffet.



 

Nice to know


Years ago, I was standing in the kitchen of the mother (Maria di Giorgio) of a good friend. She was peeling potatoes. Not many, but about 2-3. She cooked them. I kept an eye on what she was doing, but as we only met at lunch, I didn't know what she had done with them. I did not see a potato on the table. When I asked about it, she said, smiling, pointing to the focaccia: in it. I had already praised that divine focaccia to the skies. With potato and all.
