Salmon fillet with leek sauce

Salmone ai porri coi capperi

Ingredients 4 persons
4 Pieces of salmon fillet (sea trout or a
firm white fish)
Olive oil
2 leeks in thin rings
2 tablespoons capers
White wine
Pepper and salt
Finely chopped parsley
2 frying pans
or oven dish
aluminium foil

1. You can fry the fish legs in a frying pan or cook them under the grill.
2. Under the grill: Grease an oven dish with olive oil. Sprinkle the fish with salt and pepper, put some more oil on top and place in baking dish. Bake for about 10 minutes.
In the frying pan: heat the oil and carefully place the fillets in the pan with salt and pepper on top. Turn them after 5 minutes. Keep the fillets (grilled or fried) warm in aluminum foil.
3. Heat some olive oil in a frying pan and slowly fry the leeks in it. Deglaze with some white wine. Let everything simmer for 3-4 minutes.
4. Add capers and parsley, pepper and salt.
5. Put the fish on preheated plates and add the sauce. Serve immediately.
👉🏽 Boiled potatoes are often considered boring. Yet good potatoes (Opperdoezen, for example) are delicious as a side dish. Boil them until tender and, if desired, serve with a butter sauce with some chopped parsley.
