Tartlet with courgette from the oven

Flan di zucchine al forno

Ingredients 4 persons

2 medium-sized courgettes

60 grams of butter

4 eggs

160 ml milk

80 grams of flour

30 grams grated emmental (or another spicy cheese)

50 grams grated parmesan cheese

Oregano, salt and pepper



1 round baking dish of 20 cm

4 round oven dishes of 10-12 cm

1. Preheat the oven to 220 degrees.

2. Remove half of the butter (30 g) and put it in the oven dish or divide cubes between the smaller dishes.

3. Melt the remaining 30 g in a pan. Do not let it burn!

4. Wash the courgette and cut thin slices lengthwise with a potato peeler or mandolin. Set aside.

5. Break each egg into a bowl to check if it is good. Then put it in a deep bowl. Add the 160ml milk, 80g flour, the melted 30g butter, 30g grated emmental, 50g grated parmesan.

6. Mix everything together well with a mixer and then add a little oregano, a good deal of ground pepper and salt. Taste now and then, because the cheese is also a bit saltier, so it can easily be too much.

7. Put the oven dish or the small dishes briefly into the hot oven to melt the butter. Take them out and, with a brush, spread them thoroughly over the dish or dishes.

8. Pour the mixture of eggs, flour, butter and cheese into the dish or divide it equally among four dishes. Now place the long slices of courgette sideways (i.e. with the narrow side down) in the mould(s) and drape them in nice circles (see photo).

9. Place the dish or dishes in the middle of the oven and bake for 10 minutes. Then lower the temperature to 200 degrees and bake for another 10 minutes. Do NOT open the oven door in between.

10. Serve the tart or tarts immediately. If necessary, add some black pepper.



👉🏽 Je kunt allerlei soorten kaas gebruiken, maar zorg wel voor een pittige kaas in plaats van Emmentaler.


👉🏽 Probeer dit recept ook eens met gedroogde tomaatjes of paprika. Dat kan samen met de courgette of apart.
