Insalata con pollo e uva
Ingredients 4 persons
1 corn salad or large bag of rocket salad
2-3 chicken fillets cut into large pieces
1 litre chicken stock
150-200 grams of Leerdammer cheese
40 white grapes
80 gram almond shavings or walnuts
15 black olives
Cup of sour cream
4-6 tablespoons lemon juice
Peter and Salt

1. Heat a large pan with 1 litre of water and bring to the boil. Add the chicken stock. Boil the coarse pieces of chicken breast for about 10 minutes. Leave to cool down
2. Cut the cheese into cubes and the grapes into halves. Cut the olives into slices.
3. Beat the sour cream with the lemon juice and add pepper and salt. Dilute with water until a water-thin sauce has formed
4. Put the lettuce or rocket into a large salad bowl and add the chicken (cut into pieces), cheese, grapes and black olives. Then sprinkle on the shaved almonds or chopped walnuts.
5. Pour the sauce over the salad and mix well. Sprinkle with croutons if necessary.
