Creamy mashed potatoes

Purea di patate cremosa

Ingredients 4-6 persons

1.5 kg potatoes

300 ml full-cream milk

2 large bunches of spring onion in rings

75 grams (salted) butter

milled white pepper

salt

1. Peel the potatoes and cut them into pieces. Boil them in plenty of salted water for about 15 minutes.

2. Put the milk, butter and chopped onion in a pan and heat very gently until the butter has melted. Do not let it boil.

3. Drain the potatoes, mash them or squeeze them through a potato press.

4. Pour in the milk-butter-onion mixture in small bits and mix well. Make the puree as soft as you like.

5. Grind the white pepper to taste.
