Stinco d'agnello al gorgonzola
Ingredients 5 persons
1-1.5 kg boneless leg of lamb
3 cloves of garlic in thin slices
Pepper and salt
200 grams of creamy gorgonzola
2 sprigs of rosemary: the leaves
2 sprigs fresh thyme: the leaves
200-300 grams raw ham
5-6 tablespoons olive oil
4.5 dl dry white wine
Kitchen twine

1. With a sharp knife, make indentations in the meat.
2. Push a slice of garlic into each notch.
3. Sprinkle the meat with salt and pepper.
4. Spread the gorgonzola over the meat.
5. Sprinkle with rosemary and thyme.
6. Wrap the meat in the raw ham. Tie the raw ham with the kitchen twine.
7. Now you can let it rest for a while in the fridge.
8. Preheat the oven to 180 degrees. Heat the olive oil in a casserole. Put the leg of lamb in the pan and fry it all around. Turn it gently with two wooden spoons.
9. After about 30 minutes, pour the white wine over the meat. Then slide the meat into the oven for about 30 minutes. If you put a meat thermometer in the meat should indicate 55 degrees.
10. Remove the meat from the oven and let it rest for about 30 minutes. Cut the meat and serve immediately.
11. Heat the sauce and serve separately.
👉🏽 Lam is een magere vleessoort en erg smakelijk. Er hoort een volle rode wijn bij.
👉🏽 Als groente is het lekker om hier licht gestoofde worteltjes in olijfolie en marsala bij te geven.
