Spelt salad

Insalata di farro

Ingredients 4 persons

300-400 grams (pearl) spelt

250-350 grams of good tuna from a can

4 beautiful ripe tomatoes

2-3 balls of mozzarella

20-40 leaves of fresh basil

olive oil

Pepper and salt

1. Cook the spelt with the salt according to the instructions on the packet. Usually that is about 20-22 minutes. Rinse immediately with cold water.

2. While the spelt is cooking, cut the tomatoes and mozzarella into pieces.

3. Drain the tuna and loosen the slice with a fork.

4. Tear the basil leaves into large pieces.

5. When the spelt has been cooked and has cooled down a little, first spoon some spelt into the salad bowl. Then add some tomatoes, mozzarella, tuna, olive oil, pepper and (little) salt. Then another layer of spelt, followed by the tomatoes, mozzarella, tuna, oil, pepper and (little) salt.

6. Repeat until everything is used up. Then give the salad another good stir. Cover.

7. You can serve the salad lukewarm or completely chilled. In the latter case, keep it in the fridge.


👉🏽 This salad can be made with all kinds of vegetables. Try it with roasted courgette, aubergine and tomato. Or make a variation with pepper, mozzarella, tomato and fresh oregano.
