Zuppa di pollo curativa
Ingredients 4 persons
2 liters of water
2-3 organic chicken drumsticks
1 onion
2 leeks
5 winter carrots
1 handful of chopped parsley
2 sprigs of thyme
1.5 teaspoon black peppercorns
1 bay leaf
1 piece of mace
2 tablespoons lemon juice
salt, pepper, nutmeg
olive oil and soy sauce
75 grams of basmati rice

1. Clean 1 leek, cut it into thin slices.
2. Chop 1 of the onions.
3. Clean and thinly slice three winter carrots as well.
4. Take a large soup pan and put in it:
- the water and chicken legs
- leeks, onions and winter turnips
- whole peppercorns (slightly bruised)
- sprigs of thyme and half the parsley
- bay leaf and mace (see below for variations)
- small dash of olive oil
5. Bring the water with all the ingredients to a boil and let the broth steep for over 2 hours (longer will do) on low heat/low setting. Skim any foam from the boiling broth.
6. Now put a clean colander on another large pan and pour the broth into it, making sure all the ingredients end up in the colander.
7. Remove the chicken from the colander: be careful because pieces of the chicken legs may have come loose. You can now remove the cooked chicken from the bolts and store them separately.
8. Any vegetables used for the broth can be discarded.
9. Now clean and chop the remaining leeks and winter carrot very finely or grate the winter carrot. Add that to the broth that you put back on the heat. Bring the broth to a boil again and then turn the heat down low.
10. Also add parsley, a little lemon juice, soy sauce, salt, pepper and to taste other herbs (also delicious with a little rosemary or extra thyme). Always taste to see if you can add more salt.
11. Now add the rice to the broth in the pan and cook for about 10 minutes.
12. Finally, add the chicken back to the soup and cook for another 5 minutes.
The soup is now ready.
👉🏽 Hou je van pittige soep dan kun je er ook wat gedroogde chilipepertjes of sambal aan toevoegen.
👉🏽 Sommige mensen houden van een extra 'bite' en voegen kruidnagels en een stukje gember toe bij het trekken van de bouillon. Ze zijn smaakbepalend en wie er niet van houdt kan ze beter weglaten.
