Zucchini terrine

Sformato di zucchine

Ingredients 4 persons

4 zucchinis

2 eggs

250 grams of ricotta

30 grams grated parmesan cheese

4-5 large tablespoons breadcrumbs

3-8 slices Emmental or other cheese

salt and pepper

1. Preheat the oven to 180 degrees.

2. Grate 3 zucchinis into a bowl. Cut the 4th zucchini into slices and set aside.

3. Crack two eggs separately into a bowl (check to see if they are good) and then add them to the zucchini. Stir the eggs with the courgettes until the mixture becomes slightly frothy.

4. Add salt and pepper (to taste).

5. Stir the ricotta in a bowl and then add it to the eggs with the zucchini. Mix well.

6. Add the grated parmesan cheese. Mix well again.

7. Sprinkle 2-3 tablespoons of breadcrumbs into the mixture and stir well. Feel the mixture become a little firmer.

8. Grease a square or rectangular baking dish with olive oil and make sure you grease the bottom as well as the sides.

9. Sprinkle breadcrumbs on the bottom until it is completely covered.

10. Put half of the zucchini egg ricotta cheese breadcrumbs mixture into the baking dish. Then place slices of cheese in the middle, but leave 1 centimetre from the edges.

11. Cover with the remaining mixture and now place the zucchini slices on top of the mixture. They can overlap each other slightly (the slices). Sprinkle with some breadcrumbs and some pepper.

12. Bake 25-30 minutes in the oven and serve warm.

Nice to know

Sformati (terrines) come in all shapes and sizes in Italy and especially in Tuscany. You can make them with pumpkin and potatoes, with cauliflower, with spinach and with different kinds of vegetables. Make sure you never make too much, because they are usually powerful dishes.
