Farmer's apple and blackberry pie (slider pie)

Ingredients 8-10 pieces

2 eggs

225 grams of sugar

55 g flour

125 ml milk

100 grams of butter

2 teaspoons baking powder

1 teaspoon vanilla essence



4 large apples (golden delicious, elstar or jonagold) peeled and cut into pieces

Lemon juice

1 box of blackberries from the freezer (or fresh) (about 200 g)

1. Preheat the oven to 190 degrees. Line a springform pan of around 26-28 centimetres with baking paper.

2. Peel the apples and cut them into small pieces. Immediately drizzle with lemon juice. Clean blackberries and drain. Or let them thaw. They don't have to be completely thawed.

3. Melt butter in a saucepan, then immediately remove from heat so the butter does not brown. Prepare the appropriate amount of flour, milk and baking powder in advance.

4. Put the eggs and sugar in a bowl and mix until the sugar has been incorporated.

5. When the sugar and eggs are completely mixed, sift in the flour and mix well.

6. Then mix in the melted butter, milk and vanilla essence. Mix everything well. At the end, add in the baking powder. (The baking powder may also be sifted in with the flour).

7. Then spoon the apples and blackberries through the mixture.

8. Put the mixture into the springform pan lined with baking paper and place the springform pan at the very bottom of the oven. Bake the cake for 10 minutes.

9. Then place the cake in the middle of the oven and bake for another 50-55 minutes. Note: Check in between that the top is not getting too dark. If it does: cover the top with aluminium foil until the cake is ready.



Take the cake out of the oven and let it cool. You can sprinkle the cake with icing sugar.


👉🏽 Je kunt de taart ook alleen met appels maken. Ook lekker, maar net wat minder speciaal dan met de bramen. Gebruik in dat geval 1-2 appels extra.


👉🏽 Ik heb ontdekt dat de taart nog iets lekkerder is als je overal 1,5 keer de hoeveelheid van neemt. De bodem is ietsjes hoger. Neem dan: 3 eieren, 300 gram suiker (dat is niet 1,5 keer de hoeveelheid maar is meer dan genoeg), 80 gram bloem, 200 ml melk, 150 gram boter, 3 theelepels bakpoeder en 1,5 theelepel vanille-essence, 5 appels en 200 gram bramen.

 

Nice to know

The cake is delicious, but never put it with the bottom part of the springform pan on a plate. We did that once. The cake slid back and forth twice, and... launched itself off the table. Since then, the cake has been called the 'slide cake' here.
