Apple pie of Thea (mother cake)

Crostata di mele alla Teadora

Ingredients 20-24 pieces

700 grams of flour

½ bag of baking powder

250 g butter

300 grams of white caster sugar

pinch of salt

2 eggs (of which 1 for the top layer)

1 dl milk


1 kilo of apples (goldenrainets)

some lemon juice

cinnamon

1 tablespoon of sugar

possibly almond shavings

Currants or sultanas

bit of pearl flour


Large rectangular baking tray

Baking paper.

Extra flour for dusting.

1. Preheat the oven to 175 degrees.

2. Make the dough by mixing all the ingredients together with a mixer or preferably a food processor. You should get a nice oily dough that is smooth and not crumbly.

3. Leave to rest in a container (in plastic) in the fridge.

4. Peel apples and cut into small pieces.

5. Sprinkle with lemon juice and then cinnamon and a little sugar. Optionally, stir in almond meal and/or raisins/currants. Leave to stand.

6. Divide the dough into two parts: 2/3 and 1/3. Roll out the larger part between two layers of baking paper the size of the baking tray. It should be a thin layer of dough. Remove the top layer of baking paper and slide the dough onto the baking sheet.

7. Sprinkle breadcrumbs over the top, so that the bottom layer is slightly covered. Then sprinkle the apple mixture on top.

8. Roll out the remaining dough to the size of the baking tray. Do this again between two layers of baking paper with enough flour so that it does not stick. Remove the top baking paper. Then turn the dough over the apple mixture and spread the baking paper over the apple mixture. Remove the baking paper. Press the dough firmly on all sides.

9. Cut holes in the dough. Then brush with a beaten egg. If necessary, sprinkle with some sugar and cinnamon.

10. Slide the tray into the oven and bake for 60 minutes. The apple cake is ready when the top is light brown and the sides are cooked but not too hard.

11. Allow to cool on the plate and then divide into square or rectangular pieces.


 

Nice to know

My mother (Thea) was a baking star: the most beautiful pies, wonderful apple balls, sausage rolls, delicious bread and also this delicious apple plate. She always made a lot, so she could keep the pieces in the freezer for when there were (unexpected) visitors.

A salient detail: she could bake like no one else, but strangely enough, she had no talent for cooking. My mother's apple slice has been known as 'mother cake' for a few years now.
