Filetto di crosta
Ingredients 6 persons
800 grams roast beef at room temperature
Salt and pepper
3 tablespoons olive oil
20 grams of butter
3 tablespoons olive oil
1 clove of garlic
Pinch of dried chilli peppers
400 grams of finely chopped mushrooms (mushrooms or a mixture)
200-300 grams of thinly sliced raw ham
250 g dough for savoury tart
1 egg yolk
30 g whipped cream

1. Rub the meat with salt and pepper. Heat the oil in a casserole or frying pan. Fry the meat for about 15-20 minutes on all sides. This is a bit to your preference. If you like it redder, fry for 15 minutes. If you like your meat a little more well done, bake it for about 25 minutes.
2. Remove the meat from the pan and let it drain on a grid.
3. Melt butter with oil in a frying pan. Add the clove of garlic (crushed or pressed) and the chilli peppers. Now fry the mushrooms. Then puree the mixture completely smooth with a hand blender or blender.
4. Now lay the slices of raw ham on a board at an angle so that they overlap.
5. Now spread the mushroom mixture on one side of the meat. Lay that side on the cured ham and now grease the other side with the mushrooms and fold the cured ham over the whole thing. Let it rest for a while.
6. Heat the oven to 180 degrees.
7. Now roll out the pastry for savoury tart very thinly and place the meat on it. Wrap it all up and keep some dough behind.
8. Make a nice decoration with strips on top of the meat.
9. Beat the egg yolk with the cream and spread it on the meat.
10. Put the meat in an oven dish or place it on a baking sheet lined with baking paper and roast it in the warm oven for 30-35 minutes until it has a nice golden colour.
11. Take the meat out of the oven and serve it with oven vegetables or potatoes.
👉🏽 Er kan goed gevarieerd worden met de paddenstoelen. Je kunt ook de paddenstoelen nog extra kruiden met peterselie of een andere smaak.
