1. First, make sure you have the bolognese sauce made.
2. Preheat the oven to 180 degrees.
3. Put some olive oil in a pan and fry the onion with the chili flakes until it is golden.
4. Chop the fresh spinach and fry it in the same pan. Add a little at a time and let the spinach shrink. When all the spinach has been fried, you will only have a little left, but that is more than enough.
5. Put the spinach in a sieve and let it drain over a pan or deep plate.
6. Now cover the baking dish with 1/3 of the bolognese sauce.
7. Place three lasagna sheets side by side on top of that.
8. Top with a layer of mozzarella slices (1/3 of the way through) and sprinkle with ground salt and pepper.
9. Cover with some 1/3 of the spinach. Then bolognese sauce again and on top of that the lasagna sheets.
10. Again mozzarella slices, salt and pepper, spinach, bolognese sauce, lasagna sheets, mozzarella, salt and pepper, and finally the last spinach.
11. Grate over the top a lot of parmesan cheese.
12. Place the baking dish in the middle of the oven and bake the lasagna for about 35-40 minutes.
👉🏽 So you can also make a vegetarian version of this if you make a vegetarian Bolognese sauce.
👉🏽 If you can get it: also try chard. That has a very different and more intense flavor. You can also layer ricotta instead of mozzarella. The important thing is that the lasagna sheets are wet enough to cook well.
