Biscotti al cioccolato speciali di Liekiepiekie
For about 24 cookies
225 grams unsalted butter
(at room temperature)
350 grams of sugar
2 eggs
1 sachet of vanilla sugar (8 grams)
400 grams of flour
0.5 teaspoon of salt
1 bag of baking powder (15 grams)
100 grams of dark chocolate
100 grams of milk chocolate
100 grams of white chocolate
baking paper

1. In a bowl, beat the butter and sugar until creamy.
2. Add the eggs one at a time, then mix in the vanilla sugar.
3. Then stir in the flour, salt and baking powder.
4. Coarsely chop the chocolate and mix it into the batter.
5. Then make 24 equal sized balls (about the size of golf balls) and place them on baking paper on the baking sheet.
6. Now preheat the oven to 170 degrees. Then slide the balls into the oven and bake for 15 minutes.
7. Let the cookies cool and then EAT (and don't forget: make new ones right away!).
Nice to know
It is so much fun to cook with children. With Lieke, I started when she was about 10-11 years old. Lieke regularly surprised me and our family with cake or other goodies. In the summer of 2022, she had discovered chocolate chip cookies that she delivered to our home. I rarely ate such delicious cookies.
Divine they were and we let it show. Promptly she baked another batch. On my birthday she gave me the recipe. The description says a lot about Liekie (see right). In 2023 her parents, brother and sister gave me a whole load of cookies with the recipe written out again. Wonderful gift.
They are beautiful memories of that sweet Lieke. She has gone away, but will actually stay with us always in this way.
