Cheesecake classico

Ingredients 12 pieces
75-100 g saltless butter
220 g cookies (e.g. oat cookies)
600 g cream cheese (monchou/philadelphia)
180 g granulated sugar
4 medium eggs
125 g fat yogurt (Greek)
2 tsp vanilla extract
15 g white flour
24 cm springform pan
baking paper
Topping to taste

1. Preheat oven to top and bottom heat 150 degrees. Cover a 24-centimeter springform pan with baking paper.
2. Mash the cookies very finely (can be done with a hand blender).
3. Melt the butter in a pan and add the crumbled cookies. Now put them in the mold and press well.
4. Using a mixer or in a food processor, mix the sugar with the cream cheese.
5. Add the eggs 1 at a time and stir well. Do not put the mixer on the highest setting.
6. Next, mix the yogurt with the vanilla extract and add it to the cream cheese mixture while stirring.
7. Finally, add the 15 grams of white flour. Allow to mix again briefly.
If you want to add an extra flavor you can. Think lemon, forest fruit or another flavor. Don't add too much.
8. Pour the cream cheese mixture onto the cookies and smooth everything well.
9. Bake the cheesecake in the oven for an hour. Then turn off the oven and leave the door ajar.
10. Then place the cheesecake in the refrigerator for at least 4 hours
11. Use a topping of your choice such as lemon curd, forest fruit, strawberries or caramel.
👉🏾 You can use all kinds of cookies: digestive, oat cookies, bastognes. It's just how strong you want the flavor of the bottom to be.
👉🏾 If you want a distinct flavor for your cheesecake think about adding pistachio cream, dulce de leche or grated lemon zest.
