Vegetable pie

Torta di verdure

Ingredients 3-5 persons

Olive oil

1 onion finely chopped

1 pepper finely chopped

1 aubergine cut into cubes

2 diced courgettes

1/2 cup diced mushrooms

1 stalk of broccoli, chopped finely

3 eggs beaten

grated old cheese

Italian herbs

Pepper and salt

2 teaspoons sambal badjak

Pastry dough for savoury tarts

1. Preheat the oven to 180 degrees.

2. Grease a 28 cm springform pan with butter or oil. Line the mould with the dough.

3. Put the olive oil in the pan and fry the onion in it. Add the pepper.

4. Then add the courgette and the mushrooms. Then the broccoli.

5. In a separate pan, fry the aubergine. Then add it to the other vegetables.

6. Then pour off all the liquid from the vegetables.

7. Beat the eggs with Italian herbs and pepper and salt. Add the cheese and the sambal.

8. Pour the vegetable mix onto the dough. Pour the eggs with the herbs, cheese and sambal over the vegetables and mix it up a little.

9. Place in the middle of the oven and bake the vegetable tart for about 30 minutes.



👉🏽 Vegetable pie can be made with all kinds of vegetables. You can experiment liberally with anything you have left in the vegetable drawer. For example, instead of onion, use leeks.

👉🏽 You can use other types of cheese, such as parmesan cheese.
